This is our "new harvest" olive oil, made from estate Maurino olives that were harvested October 2025. This exceptionally fresh oil is unfiltered and unclarified, so it is naturally cloudy. Our Olio Nuovo is intensely grassy and flavorful -- such a special treat that we look forward to every harvest season. Because it is not yet clarified, it should be used by February 28th, 2026.
